What’s in this delicacy:
1 Large Red Bell Peppers
3 Scotch Bonnet Peppers
1 Large Onion – Peeled and sliced
1 Garlic Clove-Peeled
2 Tbsp of Vegetable Oil
1 Tbsp of Old Bay Seasoning
1/2 Teaspoon of Sea Salt
1 Tablespoon of Eru (locust beans)-Optional
24 oz of Chopped Spinach (Rinsed, soaked and drained in hot water)
30 oz of Chopped Kale (Rinsed, soaked and drained in hot water)

How to Make this delicacy:
Add peppers, 1/2 of the onions, and garlic to a food processor and blend and set aside- no need for this to be a smooth purée.
In a Large sauce pan, add vegetable oil, then heat the oil for about 2 minutes, add the other half of the sliced onions. Then add the pepper mix to the hot oil. Add, Stir the pepper and then add in Old Bay seasoning and salt to taste. Add rinsed locust beans if you have them and let it simmer for 10 minutes. After simmering, add chopped spinach and kale to the pepper mix and stir then let this simmer for about 10 minutes.
Serve and Enjoy with your favorite swallow (Okele), rice or just by itself.
