These are so preeti cute and yummy!!!! These are perfect for an instant appetizer when your girlfriends says they are coming over and you’ve got to feed them because friends that eat together stay together….
So I thought I’d try this because it seems preeti easy to put together. I had avocado and spinach dip at home so I tried it. It was delishh. I used the tositos spinach dip and added the grape tomatoes, omg it was yummy, so for the other one, I made up a mix using avocado, diced cucumber, diced celery and sour cream, also added a dash of black pepper, I didn’t have salmon so we ate it away….yum and to top it off, it’s nutritious. Stacey Baked Pita Chips were the awesome base to this tasty treat. Hmmmm yum was the feedback from friends.
Getting tasty dinner done in a preeti timely manner so you can spend time with your family is so hard these days. The challenge is we want to feed our family something really yummy and healthy meals without breaking the bank. This simple recipe can help you get dinner done in less than an hour and looks and taste like meal from a 5 star restaurant.
Pan-Roasted Chicken with Braised Apple and Cabbaage
8 pieces of chicken thigh
1/2 Head of shredded cabbage
1 sweet tart apple – cored and sliced
2 tsp of sea salt
1 tsp of black pepper (I prefer red pepper) – love peppers
I tsp of Goya Adobo (optional – but a must have for me)
1/2 cup of apple cider
2 tbsp of apple cider vinegar
1 tbsp of thyme and 3 tbsp of parsley
1 tbsp of olive oil butter – ( I can’t believe it’s not butter is my favorite and it’s DAIRY FREE!!!)
Preheat oven to 450 degrees Fahrenheit
In a large heated skillet pan, combine chicken with seasonings and cook chicken skin side down until brown and crispy (5-7 mins) and flip to the other side for another 2 mins – transfer cooked chicken to a clean plate.
Add cabbage to skillet, then toss and turn till it wilts (3 mins) then stir in apple cider, Place chicken skin side up in the cabbage mixture and add your sliced apple around the chicken.
Put skillet in oven and cook until chicken is cooked through-10 to 15 mins. Remove from oven and transfer chicken to a plate. Add the butter and apple cider vinegar to cabbage mixture. Serve cabbage mixture with chicken – dinner is ready.

My son was born with a food allergy which we discovered at 6 weeks old when he had a rash that refused to go away, he would wheez every time he was nursed – long story short, we had bloodwork done to identify what he was allergic to, turned out to be allergies to cow’s milk and eggs. The doctors expected that he would outgrow it by one, he’s almost 8 now and he’s still very much allergic to cow’s milk and eggs. As a mom, I had to come up with different alternatives to make sure he enjoys every meal and snacks a kid loves – pizza, nuggets, cookies, bread, candy. Making Halloween treats fun and allergy friendly for the kids is an adventure – favorite allergy friendly treats my son loves are skittles, twizzlers, smarties, temporary fun tattoos.
Favorite brands: Daiya, Tyson makes chicken nuggets that are dairy free – I say that’s a win!!!
Well, out in the east coast, it feels like spring on the 23rd day of October, I have fall on the brain and I’m looking forward to wearing my fall boots and sweaters.
