Preeti Sautéed Kale and Spinach – Efo Riro

What’s in this delicacy:

1 Large Red Bell Peppers

3 Scotch Bonnet Peppers

1 Large Onion – Peeled and sliced

1 Garlic Clove-Peeled

2 Tbsp of Vegetable Oil

1 Tbsp of Old Bay Seasoning

1/2 Teaspoon of Sea Salt

1 Tablespoon of Eru (locust beans)-Optional

24 oz of Chopped Spinach (Rinsed, soaked and drained in hot water)

30 oz of Chopped Kale (Rinsed, soaked and drained in hot water)

How to Make this delicacy:

Add peppers, 1/2 of the onions, and garlic to a food processor and blend and set aside- no need for this to be a smooth purée.

In a Large sauce pan, add vegetable oil, then heat the oil for about 2 minutes, add the other half of the sliced onions. Then add the pepper mix to the hot oil. Add, Stir the pepper and then add in Old Bay seasoning and salt to taste. Add rinsed locust beans if you have them and let it simmer for 10 minutes. After simmering, add chopped spinach and kale to the pepper mix and stir then let this simmer for about 10 minutes.

Serve and Enjoy with your favorite swallow (Okele), rice or just by itself.

4 lbs of Fresh Chicken Wings (Cleaned)

2 Garlic Cloves – Minced

1 Teaspoon of Onion Salt

1 Teaspoon of Cayenne Pepper

1 Teaspoon of Chili Powder

1 Teaspoon of Paprika

1 Teaspoon of Dried Oregano

1 Cup of Brown Sugar

4 Tablespoons of Olive Oil

Clean the chicken thoroughly and set aside (I usually use lemon water and vinegar to clean my chicken). Combine the garlic and spices except the brown sugar together in a bowl that has a lid, then add the chicken and then cover the lid and shake shake shake to get all the ingredients around the chicken. Bring a cup of water to boil and then add hot water to brown sugar and add to 1/2 of the brown sugar mix to the chicken, shake again then transfer the chicken to the air fryer pan, Drizzle on the Olive Oil, generously then set the air fryer temperature to 400°F and timer to 40 minutes. In between, check on the wings, toss and turn occasionally and then brush on the left over brown sugar liquid and then place back in the air fryer.

Preeti Vegan Almond Waffles

Featuring my very first Preeti Homemade Vegan Waffles. Kids and Adults Approved – win win

Recipe for Vegan Waffles Batter:

2 Cups of Almond Flour

1 Teaspoon of Corn Starch

2 Tablespoons of Brown Sugar

1/2 Teaspoon of Salt

1 Tablespoon of Cinnamon Powder

1 1/3 Cup of Almond Vanilla Milk

1/2 Cup of Unsweetened Applesauce

2 Tablespoons of Vegetable Oil

Mix all dry ingredients together and then add liquids and whisk to mix. Then using a waffle maker, pour in desired amount of batter.

2 lbs of Fresh Chicken Drumsticks (Cleaned)

2 Garlic Cloves – Minced

2 Tablespoons of Lemon Zest

1 Teaspoon of Onion Salt

1 Teaspoon of Dried Oregano

1 Teaspoon of Cumin

1 Teaspoon of Paprika

1 Teaspoon of Cayenne Pepper

1 Teaspoon of Sweet Chili Pepper Powder

1 Teaspoon of Sugar

2 Teaspoons of Hickory Liquid Smoke (optional)

4 Tablespoons of Olive Oil

Clean the chicken thoroughly and set aside (I usually use lemon water and vinegar to clean my chicken). Combine the garlic, lemon zest, spices and sugar except the liquid smoke and olive oil together in a bowl that has a lid, then add the chicken then cover the bowl and shake shake shake to get all the ingredients around the chicken then refrigerate for up to 24 or more hours. After chicken is now marinated chicken, add liquid smoke then shake then transfer the chicken to the air fryer pan, Drizzle on the Olive Oil, generously then set the air fryer temperature to 375°F and timer to 40 minutes. Preeti Kung Pao Salmon

Thinking about dinner last night – this was so good – Preeti Kung Pao Salmon & French Cut Green Beans – Getting our Omega 3s in !!!!

Our Healthy, Dairy free and Tasty Choice for Dinner 😋😋😋

The kids loved it, so that’s a win !!!!

Recipe for the Kung Pao was a modification of a recipe I saw online – see below:

1 Tablespoons of Balsamic Vinegar

1 Teaspoon of Low Sodium Soy Sauce

1 Teaspoon of Hoisin Sauce

1 Teaspoon of Sesame Oil

2 Teaspoon of Sugar

1 Teaspoon of Corn Starch

1 Teaspoon of Paprika

1/2 Teaspoon of Cayenne Pepper

1 Teaspoon of Chile Pepper Powder

1/2 Teaspoon of Celery Salt

2 Tablespoon of Vegetable Oil

2 Garlic Cloves Minced (Substitute with 1 Tsp of Garlic Powder)

1 Teaspoon of Grated Fresh Ginger (Substitute with 1 Tsp of Ground Ginger)

(I tripled the recipe on the sauce to have extras)

Under low heat in a small sauce pan, add all ingredients till it completely dissolved, then set aside.

To make the Salmon:

Coat Salmon with Olive Oil, then coat with Preeti Kung Pao Sauce and sprinkle on some Himalayan Salt to taste. (Save some of the sauce to re-coat).Air Fry at 375F for 12 Minutes, re-coat with left over sauce and air fry for another 2-3 Minutes. Serve and Enjoy.

I made enough sauce to add to the steamed green beans…it was so good.

Preeti Sweet Roasted Brussels

2 Cups of halved Brussels Sprouts

1/2 Large Sweet Red Pepper – sliced/chopped

1 Tablespoon of Olive Oil

1 Tablespoon of Pure Maple Syrup

1/2 Teaspoon of Pink Himalayan Salt

1 Teaspoon of Garlic Powder

Mix all ingredients thoroughly in a bowl and add to a baking pan then bake for 10 minutes on 450°F.

Preeti Quinoa Medley

Easy Quinoa Medley – perfect side for your favorite protein or veggie.

Ingredients:

  • 1 Cup of Red and White Quinoa
  • 1/2 Cup of Brown Rice
  • 1/3 Teaspoon of Himalayan Sea Salt
  • 2 Tablespoons of Olive Oil
  • 2 Garlic Cloves – Minced
  • 1 Teaspoon of Paprika

Instructions

  • While the quinoa and brown rice mix is still cooking, add olive oil, minced garlic and paprika and fluff with a fork and continue to cook for another 10 minutes.
  • Serve and Enjoy—-yum yum 😋 😋

Preeti P2 Porridge-“Asaro”

Porridge in Nigeria (Yorubas) is commonly known as Asaro and it’s made with Yam. In this recipe, I substituted Yam with Potatoes and Plantains. Check out this easy recipe made in under 30 minutes.

Ingredients

  • 3 Small Yellow Potatoes – peeled and cut
  • 1 Ripe Plantain – cut
  • 1/2 Teaspoon of Himalayan Salt
  • 2 Tablespoons of Tomato Paste
  • 1 Tablespoon of Olive Oil
  • 1/3 Teaspoon of Garlic Powder
  • 1/2 Teaspoon of Cayenne Pepper

Instructions

  • Clean, peel and cut potatoes into a small pot and add 2 Cups of water.
  • Then peel and cut ripe plantain and add to pot, add a pinch of salt and boil for 15 minutes.
  • Add Tomato Paste, Oil, and Garlic Powder, then add Cayenne Pepper and another pinch of dale and then mix thoroughly. The plantain mashes and some of the potatoes may mash too, careful not mash all the potatoes during mixing, then let simmer for 5 minutes.
  • Serve and Enjoy !!!

Preeti Jazzy Wings

These air fried wings were stupid delicious 😋 😋😋 – wings are a regular in our house—my kids love wings.

Ingredients

  • 2 lbs of Chicken Wings (Cleaned)
  • 1 Garlic Clove – Minced
  • 1 Teaspoon of Goya Sazon
  • 1 Pinch of Salt
  • 1/4 Cup of Parsley
  • 1 Teaspoon of Onion Powder
  • 1 Maggi Seasoning Cube
  • 1/2 Teaspoon of Black Pepper
  • 2 Tablespoons of Olive Oil

Preparation

  • In a large bowl, rinse the wings in lemon juice and water – then pour chicken into a large bowl with lid or zipper bag.
  • Add all the ingredients to the chicken in the bowl or bag and shake shake shake till stove under medium heat, add 5 Cups of water, onions, garlic, sea salt, parsley, and Maggi Seasoning Cubes then stir and cook for 20 minutes – this way you can get some of the flavor into the chicken and make sure the chicken is cooked a little before air frying.
  • Drain extra chicken broth out of chicken and set into a large baking pan and air fry in the Cuisinart Toaster Oven and Air Fryer for 15 Minutes at 400°F – since this is a large batch, you would have to do it in batches, the air fryer could only take but so much, you can also deep fry for 7 minutes each batch – till it’s golden brown.
  • Once the air frying/deep frying is done, set aside.
  • In a saucepan under medium heat, add olive oil, chopped chili peppers, sweet peppers and sweet onions. Sautée for 3 minutes or so, then add sweet chili sauce. Mix thoroughly.
  • Then add air fried/deep fried wings to the chili sauce and mix till all of the wings have been properly coated with sauce.
  • Sprinkle on some sesame seeds and  mix again
  • Serve, Sprinkle on some sesame seeds & green onions.
